    Crunchy Cucumber and Tomato Salad

    One thing about me: I love a crunchy, refreshing, no-fuss salad. And, if you're anything like me, you'll be eating this crunchy cucumber and tomato salad on repeat all summer long.

    It's fast, simple, and ready in just about five minutes, making it a great light dinnertime side or satisfying lunch. And — best of all — you'll only need a handful of fresh garden veggies, pistachios, and a couple pantry staples.

    This salad has become my go-to for busy weekday lunches, because it's so simple and holds up well for the next day. I'll typically prep it the night before and sprinkle on the pistachios when I'm ready for lunch.

    Ingredients

    Whip up this simple cucumber and tomato salad using only five ingredients plus a couple of pantry staples: red wine vinegar, olive oil, salt, and pepper.

    Four mini cucumbers, a vine of cherry tomatoes, a yellow bell pepper, two radishes and small bowls of olive oil, red wine vinegar and pistachios.
    • Mini cucumbers
    • Cherry tomatoes
    • Bell pepper
    • Radish
    • Pistachios

    Instructions

    Slice your cucumbers, bell pepper, cherry tomatoes, and radishes.

    Place in a medium-sized bowl before adding red wine vinegar and light olive oil. Stir to coat well.

    Season with salt and pepper, to taste.

    Cucumber and Tomato Salad Variations

    Once you've tried this salad as it's written, feel free to mix things up a bit. Here are a few swaps I sometimes make:

    • Spicy – sprinkle chili pepper flakes for some added heat
    • Add even more crunchiness – In addition to (or instead of) pistachios, try this salad with cashew pieces or pepitas
    • Red onion – add some thinly sliced red onion for an additional pop of flavor

    Storage

    This salad can be made ahead, and stored in an airtight bowl in the fridge for up to 24 hours. Top with pistachios once you're ready to serve.

    If you're looking for a longer-lasting option, you can also prep your cucumbers, tomatoes, peppers, and radishes ahead of time. Wait to dress the salad and add pistachios until you're ready to serve.

    FAQ

    What are mini cucumbers and where can I find them?

    Mini cucumbers look like an English cucumber but in a smaller, snackable form. They're larger than cocktail cucumbers but smaller than a slicer or pickler cucumber. They come in a plastic bag with 6-8 cucumbers and can be found at many grocery stores. I've been able to find them consistently at Sam's Club.

    Can I use any color bell pepper in this recipe?

    Of course! Feel free to use whatever color bell pepper you have on hand. Just know, the yellow, orange, and red ones will be a bit sweeter than a green bell pepper.

    Can I prep this salad in advance?

    If you're looking for a make-ahead meal for the next day, then, yes, this salad fits the bill! Add the pistachios in just before serving, so they don't get soggy.

    I don't recommend preparing this salad any further than a day in advance, as it will begin to lose some of its crunch.

    This simple cucumber and tomato salad is exactly what I crave on a hot summer day. Toss it together in just five minutes and enjoy! Serve it as a side for two people or as a refreshing lunch all for yourself.

    Ingredients
      

    • 4 mini cucumbers sliced
    • 2 radishes sliced
    • 1 yellow bell pepper chopped
    • 10-12 cherry tomatoes halved
    • 1 tablespoon red wine vinegar
    • 2 tablespoon light olive oil
    • ¼ cup pistachios
    • salt and pepper to taste

    Instructions
     

    • Combine prepped cucumbers, tomatoes, bell peppers, and radishes in a medium-sized bowl.
    • Drizzle red wine vinegar and olive oil. Toss to combine.
    • Season with salt and pepper, to taste.

    Notes

    This salad can be served immediately or refrigerated for up to a day.
    Feel free to use whichever color of bell pepper you like best. I tend to prefer yellow.
