Once you've tried this salad as it's written, feel free to mix things up a bit. Here are a few swaps I sometimes make:
- Spicy – sprinkle chili pepper flakes for some added heat
- Add even more crunchiness – In addition to (or instead of) pistachios, try this salad with cashew pieces or pepitas
- Red onion – add some thinly sliced red onion for an additional pop of flavor

This salad can be made ahead, and stored in an airtight bowl in the fridge for up to 24 hours. Top with pistachios once you're ready to serve.
If you're looking for a longer-lasting option, you can also prep your cucumbers, tomatoes, peppers, and radishes ahead of time. Wait to dress the salad and add pistachios until you're ready to serve.

Mini cucumbers look like an English cucumber but in a smaller, snackable form. They're larger than cocktail cucumbers but smaller than a slicer or pickler cucumber. They come in a plastic bag with 6-8 cucumbers and can be found at many grocery stores. I've been able to find them consistently at Sam's Club.
Of course! Feel free to use whatever color bell pepper you have on hand. Just know, the yellow, orange, and red ones will be a bit sweeter than a green bell pepper.
If you're looking for a make-ahead meal for the next day, then, yes, this salad fits the bill! Add the pistachios in just before serving, so they don't get soggy.
I don't recommend preparing this salad any further than a day in advance, as it will begin to lose some of its crunch.
